Cultural Background
Pesto is an Italian sauce, originally made by grinding and mixing; olive oil, basil leaves, garlic, sea salt, pecorino and/or parmesan cheese, and pine nuts. The ingredients where being grinded together inside a mortar, hence the name ‘pesto’ = grind. Pesto has a creamy texture.

- 30 ml olive oil
- 30 gram basil
- 10 gram garlic
- 30 gram pine nuts
- 30 gram Parmesan cheese
- 2 gram salt
- 1 gram pepper

Preperation
- Properly clean all materials
- Carefully weigh all ingredients
- Roast the pine nuts until they are slightly colored
- Clean the basil and remove the stems
- Peel the garlic and chop it roughly.
- Put the basil leaves, garlic, pine nuts, and parmesan cheese in the food processor and grind until smooth.
- Carefully add the olive oil.
- Flavor with salt and pepper
