Cultural background

Ferni is a traditional dessert from Afghanistan. It consists of milk, sugar, rice noodles, rose-water and pistachios. fried eggplants, peeled tomatoes, potatoes, low-fat curd and garlic.
This recipe was handed in by Jamshid, an Afghan-national, who moved to Berlin in 2017.

Culinary Information


For 4 persons

  • Milk (1 l.)
  • Sugar (150 gr.)
  • Rice noodle (160 gr.)
  • Rose-water (1 teaspoon)
  • Pistachio (20gr.)
  • Starch (4 soupspoons)


The preparation takes less than 15 minutes

  • Put milk and sugar in a pot and bring to a boil for 5 minutes.
  • Add the rice noodles, and – while constantly stirring – the starch and the rose-water. Boil for 4 minutes.
  • Serve cold in dessert-bowls, garnished with pistachios.

Use a big serving platter and spread about 2/3 of the curd. Add the broth on top. Garnish with the remaining curd.
