Cultural background

I am Milena Hristova. I was born in Bulgaria, the city of Varna, the third largest city in the country. It is located on the Black Sea coast. I live in Finland for almost 4 years. I am married and I have two children.

I started studying for a cooking in Sataedu because I worked as a kitchen worker and a pastry maker in my country for nearly 10 years. I love to prepare meals and desserts, so I decided not to change my profession and try to learn the food tastes of Finnish customers. It is not easy for me to admit, because in my country we do not prepare basic dishes with a sweet taste. In my food week, I prepared according to my recipe. I tried to offer recipes that Finnish people would like and taste. There are recipes that are close to my home cooking, but re-shaped for the taste of Finnish customers.

Culinary Information

Beef ingredients

  • 500g beef chuck, cubed
  • 50g carrots, chopped
  • 50g onions, chopped
  • 20g butter
  • 20ml flour
  • 2-3 bay leaves
  • 6g allspice
  • 300ml water
  • 40ml tomato paste
  • 1 tbsp. beef fondue
  • 1-2 teaspoons of salt

Mashed potato ingredients

  • 750g potato
  • 1L water
  • 2tbsp salt
  • 30g butter, cut into small pieces
  • 3dl cream, warm
  • 1tsp salt
  • white pepper

Preperation

Step 1 Cut the meat to into cubes, approximately 3x3cm.

Step 2 Chop onions and carrots

Step 3 In a casserole, sauté the beef in butter; add carrots, onions and spices. Add flour and stir. Then add water and tomato paste.

Step 4 Simmer low heat with lid for about 1-2 hours or until the meat is tender. Season with salt if necessary.

Smashed potato

Step 1 Boil potatoes in salt-water for 30-45 minutes or until very tender. Drain. Mash with potato masher.

Step 2 Add butter and cream. Mash until desired texture. Season with salt and pepper.
